In 2007, the Chicago Tribune outlined two “prevailing theories” of the Blue Moon ice cream flavor’s origin. One traces it to Sherman Dairy Products of South Haven, Michigan; but Sherman disavowed the theory, noting they buy their flavor out of state.

The other attributes the invention to Bill “Doc” Sidon, a food chemist with Petran Products of Milwaukee, Wisconsin. In a 1977 patent application, though, the company claimed a first use in commerce of 1939, a number of years before Sidon, a Jew who fled Austria that year, joined the company.

How To Make Blue Moon Ice Cream?

Blue Moon ice cream is a mystery wrapped in an enigma and covered in blue food coloring. There’s no consensus on what exactly the flavor is other than sweet and good, and I suspect different creameries throughout the Midwest have their own special formulas. On my hunt for a recipe to cook up a batch of Blue Moon ice cream at home, I discovered one on Food.cominvolving raspberry flavoring, lemon oil, and instant vanilla pudding that looked very promising and seemed to jive with what I remember Smurf ice cream, a marshmallow studded blue raspberryish concoction, tasting like. This is adapted from that recipe.

I used Boyajian’s Natural Raspberry flavoring and lemon oil which you can find online or at a baking supply store. To get a vivid blue color, I recommend using gel food coloring which provides a more intense color.

To convert this recipe into Smurf ice cream, churn ice cream according to manufacturers directions adding 1 cup of mini marshmallow in the last five minutes of churning to evenly distribute.

A word of caution: Blue Moon ice cream and its Smurf counterpart are sweet, sweet, sweet and bright blue. If either of these things are a turnoff, you might leave this flavor to the kiddos and the young at heart. Anyone left standing grab a spoon and dig in!

How To Make Homemade Blue Moon Ice Cream

Blue Moon ice cream recipe
4 cups heavy cream
1 teaspoon lemon oil
1 teaspoon raspberry oil or liqueur
3/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon natural blue food coloring

Instructions: Whisk the sugar into the cream until it is dissolved. Add the remaining ingredients and pour into your ice cream maker and mix until it is frozen…this varies based on your machine but in mine it takes 15-20 minutes. Transfer to a container and freeze until firm.

Feel free to use less cream and substitute milk if you don’t want such a full fat ice cream. I like to use cream to create a really creamy texture but you can alter this. I use homemade raspberry liqueur because I have some extra but raspberry flavoring oil will work just as well.

My ice cream maker is a simple drum attachment that goes on my KitchenAid mixer and I store it in the freezer. Most ice cream makers result in a runny “soft serve” style ice cream straight from the machine. They need to be frozen in a container (I use a glass pyrex quart dish) for a few hours to let them set completely. Freezing at this point doesn’t affect the texture, it comes out creamy and not icy.
